How can i use up a lot of chicken stock?

I made chicken stock on Saturday using the carcass of a roast we had on the same day plus another carcass I had frozen from a previous roast (ala Nigella's tip).

So now I have two large jugs of chicken stock in the fridge that really need to be used. i don't think I can freeze it because of the chicken carcass having been frozen previously.

I guess chicken soup comes to mind but I don't have any lovely recipes for it. What else??

Doesn't have to be chicken soup or risotto - you could do any vegeable soup or risotto with chicken stock.

You can still freeze it because it's been cooked since the carcass was thawed.

You wouldn't have been able to refreeze the carcass itself though.

Freeze it - not a problem IMO/E (we have never had any problems and I always do it this way).

You could try Lentil and Roast garlic soup uses 2.75 pints of chicken stock, its makes a lovely soup
