easy tuna / salmon fishcakes with lots of hidden veg

DS is 18mths and refuses to eat veg! He loves fishcakes so am looking for an easy tinned tuna / tinned salmon fishcake recipe where I can hide loads of veg. if they can be frozen too so much the better!

no veg at all in my normal fishcake recipe I'm afraid, but these tuna meatballs come in a tomato sauce that can hide a multitude of healthy veg, and freeze well (in the sauce) too.

how do you make breadcrumbs?
is is just stale bread in a food processor? Is that it?

That's it amidaiwish, doesn't even have to be stale. Break it up a bit first.

I always mash up some white beans like haricot or canelini and stick those in a fish cake

I find breadcrumbs made of rice, available in Health food shops for coeliacs I presume, works better as a coating. They also freeze very well, open freeze them on a chopping board for 2 hours then wrap individually in foil.

You could also try mashing in sweet potoato with the potato mash. Can't go wrong with a squeeze of heinz tomato ketchup either

well I buy gluten free "breadcrumbs" in a packet and they are made of toasted rice, it just gives a lighter crispier coating.

But that's only because my two are very fussy little blighters.

Did you get a complete recipe?

no don't have a recipe
was going to cobble something together, but haven't had much success with breadcrumbs before, esp when freezing.
