What can I do with egg yolks?

Been making meringues and now have 8 egg yolks that I don't know what to do with.

It's too hot here for custard so any ideas?

Add an extra to scrambled egg tomorrow breakfast for lovely eggs (warning once you've done it you can never go back...).

Make cookies? I think there are a few that use yolk only, I think chocolate ones.

Mayonnaise if you feel brave?

Whisk up with milk and do a nice omelette, scrambles or frittata.

Mix with Parmesan as a lighter carbonara style pasta sauce? I cook onions, chilli and garlic, throw in some pancetta then mix with pasta and pour on the beaten eggs and Parmesan!

It's not too hot for custard if you cool it and use for fruit fool, rhubarb or raspberry perhaps.

But I'd make mayonnaise! Smile

I think mayonnaise might be a bit beyond my skills. Think it's going to be custard tarts which will keep himself happy as he loves them but I've never made them for him

For future reference you can buy cartons of egg white from Tesco to avoid the issue
