My lovely neighbour has just given me lots of leeks - what can I do with them?

Steamed in a little water, drain, eat with butter and black pepper.

Leek and Potato soup from the lovely Delia Smith

Melt 50g butter in large pan.
Add 4 large leeks,(finely chopped and rinsed very well), 1 medium onion, chopped, and 2 medium potatoes, peeled and diced.
Stir well, season with S&P. Put lid on and cook over low heat for 15 mins.

Then add 1.5 pints of light chicken stock or water (I used veg stock as dd is a vegetarian) and 275ml milk. Simmer gently for 20 mins.
Blend to desired smoothness!
Before serving, reheat and add chives and a swirl of cream (I forgot this bit and it was stil lovely)

Mmmm thanks ladies - I've enough to do a soup and have some left to do some as a side to some chops.

Thats tomorrows dinner sorted!

saute the leeks add some bacon plus a good homemade cheese sauce pour over pasta: Leeky cheese! Lived on it as a student now one of my 2 yr old's favs. Send it to nursery in a food flask as the nursery doesn't provide hot food itself ALWAYS EATEN!
