Batch cooking

Planning on doing some batch cooking this Sunday. I am going to make -

  • stir fry (not a quick one so want to batch cook)
  • leek and potato soup
  • enchiladas (put them in the oven on the day)

If I did all of this on Sunday, would one of the dishes keep until weds? (So one dish per day)

What's in your stir fry? I don't think they respond well to keeping.

Either the soup or the enchiladas would be fine in the fridge until weds.

Yeah stir fry night before is fine, soup and enchiladas will be fine

I wouldn't batch cook stir fry. The soup and the enchiladas will freeze, though.
