Leftover polenta

Cooked far too much polenta for dinner tonight, what can I do with the leftovers? It was the soft and sloppy kind

Oooh I love polenta, I'd just eat it with a spoon.

Could you bake it in a tray, and cut into fingers to eat with another meal?

If it's reasonably soft, add some cheddar, feta or some salty cheese, optionally some mozzarella and then whisk some cream with eggs and mix it all in and chuck in the oven to cook.

Heck, I sometimes throw in some bacon lardons or similar.

If it's dry, you can always slice and layer instead.

so it's thickened as expected - just slice? is it good roasted or fried in breadcrumbs or anything?

should say I'm vegan too and all the leftover recipes I can find use up copious amounts of cheese!

Toss in it in some breadcrumbs, matzo or uncooked polenta and bake in the oven to make "chips" or croutons (recipe here about 1/3rd one down)

You can also brush lightly with oil and griddle on a ridged grill pan and use with garlic mushrooms, spicy tomato sauce etc as a kind of "toast"

That said I usually leave it a few days and end up chucking!
