Good salads to take to work

Need to be vegetarian and no egg... apart from that anything goes!

I'm not veggie, but I've had these combos in the past week:

Spinach/rocket/watercress base topped with beetroot, walnuts & goats cheese.

Mexican salad: diced tomato, cucumber, black beans, sweetcorn, avocado plus add some lettuce in. Olive oil and lime dressing.

I like rice, quinoa or similar as a base, makes it more filling, often use the microwave pouches for speed. Last week's included chicken but you could substitute cheese or something, then I had tomatoes, cucumber, yellow pepper, black olives and pomegranate seeds, really tasty. Worth adding herbs for interest too.

Goats cheese and roasted red onion or feta and roasted veg

Cous cous with roasted veg (courgette, red onion, peppers) and chickpeas tossed in harissa and olive oil then roasted, scattered with pomegranate seeds.

Jersey royals cooked and chopped. Add chopped grapes, apples, cornicons and celery, combine all with a dollop of natural yoghurt.

Greek salad.

Caponata.

Shredded vegatable slaw with cheese/chickpeas/beans.

Roasted veg.

Quite often have a sort of rolling programme of the above in the fridge so I can do a mixed box of salad.
