Recipe for easy chicken curry for my fussy 18 month old

Has anyone got an easy chicken curry recipe that I can make? I am convinced my dd is only not eating because she needs something spicy - if anyone has got anything which includes vegetables that would great or even something like a korma??

My kids love this sweet potato and chicken curry.

Fry a finely chopped onion in some olive oil, add 2 chopped chicken breasts cook til browned and onion is soft. Then add 1 sweet potato diced and a tbsp of pataks korma curry paste (or more according to taste) then add 1/2 a tin of coconut milk and enough chicken stock to cover and simmer til the potato is cooked.

You could swap the paste and coconut milk with garam masala and plain yoghurt, depends what you've got in your cupboard.

Thanks - I am assuming you would serve it with rice - does anybody know if you can freeze rice?

Yeah course you can. I used to freeze ice cube trays of cooked rice for DD. Also cooked lentils, different veg puree etc so in the mornings I'd pick'n'mix her meal into a pot to thaw out for lunch at the childminder. Wouldn't carry meat around thawing out in my changing bag though, too risky.
