Cake repertoire thread for recipe sharing (aggressive baking inspection)

I've got a banana cake baking in the oven (taking it to playgroup tomorrow morning to share around) and just thought I am lacking a good coffee cake recipe... and a lemon/orange poppy seed cake recipe, gooey brownies etc etc.

I have some cake recipes that are my go-to, never fail holy grail ones for certain types of cakes though and thought we could share maybe?

So, mine are:

Banana cake/loaf
Tana Ramsay's lemon drizzle cake
Nigella's chocolate Guinness cake
Dan Lepard's caramel fruit cake
Gluten free carrot cake
Swedish very gooey chocolate cake

Also related to cake, I have an excellent salted peanut butter American-style cookie recipe.

Any takers? Cake Or recipe offerings for wanted cakes? Grin

Here you are MrsPandaBear :)

The original recipe used the orange juice for a frosting for the top, but in truth I've never done that !

Carrot Cake
200 gm self raising flour
115 gm plain flour
350 gm brown sugar
2 tsps cinnamon
2 tsps bicarbonate of soda
250 ml sunflower oil (or rapeseed oil)
3 large carrots peeled and grated
4 medium eggs
100 gm raisins
100-140 gm chopped hazelnuts - some fine, some a bit coarser chopped
zest of 1 orange

Mix together all the dry ingredients
Add orange zest
Mix in the carrot, and gradually beat in the oil and eggs.
Pour into a greased and lined 20 cm square cake tin
bake in a preheated oven 180ºC /160º fan/gas mark 4 for 45-55 minutes

The Lemon meringue pie recipe which has never failed for me is the Delia Smith one magigstar1

magicstar I use a LMP recipe from one of The Great British Bake Off books, I don't have it to hand, so can't check which one, but it always works well. Even subbed the pastry for a gluten free biscuit base instead once and it worked.
