VEGETARIAN LASAGNE please - no mushrooms!

i love lasagne, but hate mince, any veggie recipies?

Oh I love veggie lasagne. I usually put onions, garlic, courgettes, peppers, spinach and aubergine and tinned toms. Then do the usual bechemal sauce and lasagne sheets, then grated cheese on top with a sprinkling of ground nutmeg. Obviously, add or delete anything you fancy..

Or make lentil bolognese - I adapted it this week from an ancient 70s veggie cook book...

Saute 2 chopped onions, 2 chopped sticks celery, 1 peeled & 'matchsticked' carrot 7 2 diced peppers, 2 peeled & crushed cloves garlic until softened. (I add sliced mushrooms).

Stir in: 2 tins chopped tomatoes, 1 cup red lentils & about 500ml veggie stock (water & stock cube fine). Add a good squirt of tomato puree & a teaspoon of basil or oregano.

Simmer for 30 minutes or longer until a thick sauce.

At this point I parted with the 70s recipe - far too bland! - & mixed in a big jar of supermarket pasta sauce.

We had with penne, but would make good ragu substitute in a lasagne recipe - I usually use Beanfeast + whatever veg is to hand, but this is cheaper & healthier...
