I have just had my first ever sweet potato wedge and I loved it. No longer will I serve a potato wedge in this house again.

I am rather angry that I have never tried them before.

JUST thought I would share my discovery

If you have a spiraliser (lurking in the back of the cupboard!), spiralised sweet potato, tossed in oil and baked on a tray until it's crispy is delicious, sort of like super-skinny French fries.

They were frozen ones today (as I am feeling very lazy) but I am planning homemade ones for Friday.

Follow NannyR's suggestion but make little dips in the spread out potato and add an egg to each dip for the last 10mins. Baked egg and sweet potato 'nests' are delicious!

Imfinehowareyou I am definitely going to try that one. Whoever knew there are so many possibilities with sweet potato!
