Cold fillings for vol-au-vents?

I'm hosting a party soon. I'm going to buy some puff pastry, cut to squares and bake them the day before, then fill with cold fillings on the day. I need simple fillings, any ideas? Thank you :)

Shrimp cocktail
Cream cheese and chives
Creamy mushroom thingy
Cold veggie chilli went down well here last week!

Egg mayo
Tuna mayo
Cheesy mayo
Prawn cocktail
Coronation chicken

Cottage cheese?

You could make the shape for the vegan, vegetarian, normal ones different - square, circular, star shaped
