What can I pickle?

Ive just pickled some homegrown beetroot and I have about half of the pickle left?

Is there anything else I could pickle with the remainder? Seems a shame to throw it

Onions, cabbage, make piccalilli. DH likes pickled eggs, I remember my gt gran pickling spring onions.

Can I use normal everyday onions? I could just peel a few layers off to make them smaller? Hmm
Also, will the pickle taste ok reheated tomorrow? Recipes say Ive got to let the onions sit in salt overnight

You can pickle almost ANYTHING. Sometimes I put slices of onion in with my beetroot pickle which is exciting because they go pink.

Pickled sliced onions are good, particularly red onions. I think you may need to blanch the sliced onions first.

I think it should be fine reheated the next day. It'll be more flavoursome!

Re blanching, how long in boiling water? Will I still need to sit them in salt?

watermelon rind. Boil it in the pickle solution for 15-30 min.
