We're all eating at different times at the mo - meal ideas so I'm not cooking twice please!!

That's it really!

Usually we all eat together at 6.30. At the moment, though, DH has a job that means he gets home at 8. So I've been mostly cooking twice an evening, once for the kids at 6.30, once for me and DH at 8.

DH has offered to cook when he gets in but that would mean eating 8.30+ which is too late for me..
I guess I could eat with the kids and DH could sort himself out, but I like us eating together, it's a good time to catch up..

So. I'm looking for recipes / meals, for dinners that are fine to cook and then serve in 2 seatings. I've got a couple - Spag Bol and Chilli for example- but need more!

Fajitas - you can cook the chicken all in one go and then either re-heat that and warm the wraps or have it cold

Macaroni cheese

Shepherds/cottage pie/fish pie -make the filling and potato all in one go, portion into two dishes and then either cook both together and re-heat the one for you and hubby when he gets home or just cook it when he gets in

Curry
You can Also prep and stage cooking so:
Roasted veg and meat/fish parcels (prep 2 lots, stagger when they go in the oven)
Tacos are good, along the same lines as the fajitas, saves reheating rice with chilli
Macaroni cheese- I cook the whole lot and reheat in the microwave
Stews, keep baked potatoes on low heat in overnight then just steam veg in microwave
Salads - roast a whole chicken, serve with salad

What kind of food do you normally eat?

Rice and dahl/ curry. Just reheat the dahl/ curry on the hob when you are going to eat, serve over room temperature rice.
Pasta and sauce - keep them separately. Take the pasta for the grown ups' dinner out of the boiling water a minute or two early and keep it in cool water. Reheat sauce when you are ready to eat, add drained pasta.
Fried rice is a good one. Boil and cool rice. Fry the veggies etc separately, with whatever seasoning, flavourings you like. Mix up only kids portion, add egg if they like it. For second round, reheat the fried veg, add the rice, add egg (optional).
