What can I do with fennel? In my veg box this week and don't want to waste it.

DH roasts it in silver foil parcels with olive oil, garlic, chilli and a drizzle of lemon. It's gorgeous.
Also good very finely minced and mixed into pork mince for home made burgers.
It's lovely pan fried or roasted with apple and pork.
It's a good basic veg chopped and fried with onion, peppers, courgettes, aubergines, tomatoes and mushrooms for a savoury veggie crumble.
Slice super thin fennel and orange and layer with fresh mint and a honey dressing for salad.

I do a bake with chicken pieces, sliced fennel, juice of a lemon and a couple of tablespoons each of white wine and olive oil pored over. Really quick prep and seriously delicious.

Also use fennel in a tomato, pepper and chickpea sauce with white fish.

Fennel is very underrated I think; it adds a fantastic savoury flavour to food.

Gratinated or made like a aubergine parmigiana with the fennel in lieu of aubergine.

Fry in olive oil till a little browned, then simmer in white wine. Grate some parmesan over the top. (Slaver!)

Cook in the Sicilian style with tinned sardines and anchovies, softened onions, sultanas and olive oil - serve mixed in with spaghetti.

Mmmm, fennel.

Fennel and orange salad.
Bake it into a loaf of bread.
Infuse it into a syrup to pour over a cake or warm fruit.
Add fennel and salty tears to make delicious meatballs Smile

I slice it really thin (with a mandolin) and then make a dressing from white wine, or rice, vinegar and sugar with salt and a dribble of oil. It slightly pickles it. If I have cabbage/cucumber/ radishes/ dill/ mint then I chuck those in too. Delicious!

Thinly sliced fennel, baby potatoes and red onion, drizzle of olive oil and seasoning, bake for about 25 mins, then add some white fish on the top with plenty of squeezes of fresh lemon, back in the oven for 10-15 mins (depending on thickness of fish). Delicious one-pan wonder.
