Glut of spinach and mint.

My lovely neighbours have just given me a massive bag of mint, and an even bigger one of spinach. I am feeling a bit overwhelmed - I could make spinach pie, but I am the only one who really likes it, and it's a bit chilly for a mint julep!
Please share your brilliant ideas, any freezable options would be great.

Shove spinach in a curry. Eat it sautéed with cream with steak. Have eggs florentine.

Drink the mint as fresh mint tea.

Thanks everyone! Great ideas here. I had forgotten just how deeply DS hates spinach, so the feta and spinach filo pie I served up was greeted with great dismay... Luckily DD loves Indian veggie food so we will be having a lot of that...

Some of the mint could go into instant pea soup.

For each serving, put 100g of frozen peas into a blender, ~1/2 tsp veg. Stock powder, quite a few mint leaves, some chives if you have them, and 150ml boiling water. Leave 5mins or so for the peas to thaw and blend, season to taste. Chill or heat.
