Pork belly recipe and sides?

I've been watching far too much Masterchef so got the idea to cook venison tomorrow. However the butcher had none in so talked me into buying a piece of pork belly instead. So now I'm planning to slow roast it but wondering what the best recipe anyone has is?

Doing starter of simple buttery garlic prawns. Suitable sides and dessert ideas? To serve 4 adults and a 3 year old.

I'd probably do red cabbage and a green veg of some description - I like kale fried with a little garlic. Roasties and gravy, obviously. And though I'm not normally mad about apple sauce, a slightly sharp one works really well with fattiness of the pork. Yum, it's one of my favourite roast dinner.

Dessert. Hmmmm. Probably something not too heavy or buttery after that. Summer pudding?

Thanks, I was thinking red cabbage, and maybe celeriac chips?

Dessert not really my strong point so something simple would be best!
