Gluten free pancakes?

Got DC friends staying over Saturday, I'd said I would do pancakes for breakfast on Sunday but one is gluten free - anyone have an idea what works best from the following:

GF flour for baking
Almond flour
Coconut flour

Mashed banana mixed with egg and a drop of vanilla is nice otherwise just gf plain flour. I think the doves farm one has a recipe on the back.

Buckwheat flour, like they use for crepes/galettes in Brittany - delicious and gluten free!

The GF flour for baking works great. The banana 'pancakes' otoh are just rounds of fried banana to me

Doves Farm Flour. The banana "pancakes" aren't great, just make normal ones with plain GF flour.

Make them with self-raising GF flour (assuming you're after Scotch pancakes, not crepes) and your usual recipe.

I make banana pancakes by whizzing up an egg, a banana, a handful of porridge oats and some bicarb. Fry in coconut oil.

GF flour worked a treat - I haven't used it before and had some leftover from a random birthday cake so glad it's gone to good use!
