Fantastic sauce for steak?

Went out recently; had steak with mash and spinach; lovely sauce to go with, like essence of butter and mushrooms. V nice change from the usual steak and chips.

Anyone got a really good (and easy) sauce recipe? I'd be hugely grateful.

Gently fry mushrooms in butter, add double cream and big dollop English mustard. At this time of year if you can find some Wild garlic leaves to stir in, even better. Did this last night and it was yum.

Mix rich beef stock pot and water. Make a roux, add glut of red wine and crushed garlic. Slowly add stock and let reduce for a few minutes until thick and rich. Best sauce ever!

for steak, I love a good mushroom sauce also love blue cheese sauce on steak and red wine sauces work well too, a creay garlic flavoured sauce works well too, I love steak can you tell? Grin

sorry you wanted a recipe, here's mine.
Sautee mushrooms, onion and garlic in butter, put aside to cool, Make a roux with butter and flour, add whole milk until it thickens, season well with salt and pepper, add the mushroom mix and take off the heat, stir for a bit to let the flavours infuse, add blue cheese and mix till it melts, tip over steak and enjoy Smile

I just panfry the steaks in butter, remove them to rest, then add onions and mushrooms into the same pan, cook for a couple of minutes then add a dash of double cream and Jack Daniels. Reduce until the right consistency.

Fry mushrooms alongside the steak, put the steak to rest, stir cream and blue cheese into the juices till melted and mixed.

cook finely chopped onion in butter, add mushrooms and cook if you want at this stage, season with black pepper, add cream and French mustard, cook a bit then add brandy and flambé it - ready
