I love cooking but unfortunately I'm not very inspired. I need an easy, fairly quick recipe for haddock fillets. Inspire me Confused

Mix together natural yoghurt with a good dollop of curry paste (home made of cheat) coat fish in it. Leave to marinate as long as you've got. Bake for 10mins then spread top with mango chutney and finish under the grill. Serve with salad and sweet potato wedges.

Onto a sheet of foil, drip a little olive oil and spread it thinly, place on the haddock fillets in a single layer, cover with some very finely sliced onion, crushed garlic and chopped tomatoes, sprinkle a little paprika if you have it, and some black olives if you like them.
Wrap into a parcel, but just before the final seal pour in a splash of white wine or Noilly Prat. Bake for 15 to 20 minutes.
Even quicker is to use a ready made tomato based sauce, perhaps puttanesca!! Wine Wine

Ohhh thanks. Parcel thing is a good idea as they go dry in the oven sometimes. Tasty. Herbs, white wine and butter could work too!

A teaspoon of sundried tomato pesto spread over the top & wrapped in prosciutto before baking for 15-20 minutes. Very quick & absolutely delish!
