Spanish tortilla. Made on Sunday and then split for the week.

Scrambled eggs cooked in the microwave with toast.

Nuts and honey over full fat greek yoghurt

I make wholegrain steel cut oats in the slow cooker. Just whack them on low heat overnight. I find them more filling than regular porridge. I make enough for several days in one batch, then reheat a portion in the morning as needed. Sometimes I add a dash of cinnamon, maple syrup and some chopped apples in while they cook which is nice.

KoalaDownUnder · 06/05/2017 04:21

violet, would you mind telling us ratios of water (milk?) to steel-cut oats in the slow cooker, please? Smile

violetbunny · 06/05/2017 13:18

One part steel cut oats to four parts liquid. I usually use milk and water, or almond milk.
1 cup oats to 4 cups liquid makes about 4-5 portions.

Thank you! Smile

Egg muffins - basically little omelettes baked in muffin tins, I add spinach, cheese and ham. They freeze well, I take one out the night before and stick it in the microwave in the morning to warm it up.

Poached egg on toast. Really doesn't take very long and is just a great start to the day.

Yogurt and a few oats/raisins/berries.
