What are the food hygiene rules?

Inspired by another thread about feeding DC chicken that was left out overnight. Can anyone tell me some food hygiene rules backed by scientific evidence?

I was brought up to put all leftovers in fridge and thoroughly reheat before eating. DH is much more lax (although MIL nukes everything in the microwave). I'm also more cautious about the use by dates on deli meat, open jars etc. This causes arguments, particularly where food is being served to DC. DH thinks I am overcautious. Interested in evidence from respected sources rather than "my MIL ate raw sausages every day for 75 years and wasn't ill a day in her life" type responses Grin
