I had never checked this Lakeland website before, I just did as I have been trying to get hold of mini-muffin trays and was tempted by your yummy-sounding posts.

£20 later!! I have vowed not to visit the site again! At least not for another month or so...

I'm with SoupDragon, I think you were both very restrained. I really want to go to the new shop at Windermere, apparently it's HUGE. Dh keeps teasing me about it ... he's been, and I haven't.

floppy tins bad. Just too floppy.

Raspberry muffins here are doing very well, dd and friend had one each (and me too ), amd sending some to friend's mum (don't want to be the only one to inflate )

Bagpuss - I have on a Word document Susan Reimer's basic muffin recipe (and helpful hints) with variations/additions: i.e. lemon, choc chip, etc. If you send me a CAT, I'll email it to you.

But the book is fab - get hold of it if you can.

Easy: A MN meet-up at the Lakeland shop? Now there's an idea! The coffee is the best I've come across in Cumbria.

(Do you come across this way often? I had you down as Yorkshire/Derbyshire, is that right?)

Have you let them cool before taking the case off coddy? If they still stick when cool they might be slightly under-cooked, you could try an extra 5 mins in the oven next time.

IME little ones do tend to stick a bit more than big ones, and some recipes - are more prone to sticking too. I think the 'basic' recipes are more likely to stick, especially choc chip. Also spiced apple usually stick: but don't let that put you off, as they are gorgeous. (Do you have big tins as well btw? Some muffins don't work particularly well as little ones - summer fruits is certainly one.)

Cooking them for slightly longer should make them a bit firmer, and less likely to stick.

But I 'serve' mine still in their muffin papers, so punters just have to peel their own off anyway, and rescue the stuck bits if they want!

Coddy - I hated Nigella's Banana Muffins as well - in fact no-one liked them, put them out for the birds and they didn't touch them either

Can thoroughly recommend Nigella's Lemon Syrup Loaf - absolutely delicious!

DD2 and I are having a "cooking" day on Friday - perhaps I'll sneak in some Raspberry and lemon muffins

have you done the millionaires shortbread? do double quatity of rhte basea sthe filling the way she fdoes it is too thick
