Vegetarian substitute for crab sticks

What can I use instead of crab sticks, that's vegetarian?

Marinated tofu would be vegan.
Paneer or halloumi would be vegetarian.

they won't taste like crab sticks, but they will have protein and a vaguely similar texture depending on what you're doing with them.

Cashew nuts might work better in a different recipe. What's it for?

A lot of the flavour in that recipe will be coming from the horseradish, I don't think there's is an obvious sub for the crab, I think I would either leave it out entirely or sub for something that would go with the horseradish, raw shredded beetroot for example. I guess if you wanted to replicate the meaty texture of the crab finely chopped quorn may work or even hard boiled egg.
