Does anyone have any good recipes or suggestions? What can I cook that freezes well for midweek dinners? I do veggie chilli a lot already.

Veggie lasagne or moussaka
Chickpea and apricot tagine
Veggie sausage stew
Thai green curry with tofu or Quorn chicken pieces

Veggie sausage casserole
Chickpea and spinach curry
Veggie shepherds pie - I use green lentils instead of quorn mince plus loads of veggies
Aubergine parmigiana - (with veggie parmesan)
Bean burgers
Veggie pasta sauce (then just cook pasta fresh)

Anything saucy like curry or tagine freezes really well.

I find harder veggies like squash freeze and reheat better than things like courgette unless they are chopped up smallish.

Quorn 'chicken' and leek pie
Soup
Veggie burgers (can have buns frozen too) - we do black bean and beetroot, and also tofu
Bolognese sauce with Quorn mince
Curries
Veggie chilli
Spinach and ricotta cannelloni
Daal
Freezing tofu and stir fry sauce is easy, then all you have to do is put both in the fridge the night before and stir fry them with noodles and veg at dinner time
HFW's squash and chickpea African stew

That's pretty much my list for batch freezing before dc2 arrives. Plus some basic tomato sauce that can be added to for easy meals. And pizza bases probably. Shredded pizza cheese also freezes well so all you need is sauce and jarred toppings.
