Sausage casserole

Giant pigs in blankets with mustard mash, cabbage and onion gravy

Served in warm hotdog rolls alongside coleslaw and potato/sweet potato wedges

There's a gorgeous Jamie Oliver recipe I've found which is so so tasty and lovely with rice! Its cajun spiced and you can use different veg depending on what you have in the fridge. It's nice with kidney beans added too. www.jamieoliver.com/recipes/pork-recipes/southern-sausage-stew/

Mainly with sausages I do:
Toad in the hole.
Sausage and mash.
Hot dogs.
Sausage pasta.

I do sausage casserole all the time. Fry onion, carrot and whatever other veg you have hanging around. Add sausages that you've already browned. Tip in a load of puy lentils. Add a tin of tomatoes and some stock so the lentils will have enough liquid. I set it off in the pressure cooker but you could either bake or simmer until the lentils are done. Serve with mash/rice/new potatoes etc.

Tip sausages into baking tray. Pour over jar of Paul Newman BBQ sauce. Bung in oven for 40 mins. Serve with rice and veg.

Stovies

Peel and cook potatoes

Sausages chopped into chunks, dry fry them and then add lemon juice, a teaspoon of English mustard, dried basil and plenty of creme fraiche, mix together then add cooked pasta and peas. It's a staple in our house and is delicious!

I bought a packet of dried salad pulses last year which I never used so in addition to lentils I add these and pearl barley to my sausage casserole. Complete meal done in slow cooker. It does absorb a lot of liquid so keep an eye on.
