Anything I can do with cauliflower to make it acceptable in a warm salad?

I have all the ingredients for a warm salad in the fridge and I reallly fancy it for dinner.

But, I also have cauliflower that needs eating. It's telling me to make curry.

I don't want curry I want roasted veg and a warm salad. How can I make the cauliflower go with it? Is it possible?

Cut into florets and put in a bowl. Drizzle with oil and spices (cumin seeds and ground coriander, salt and pepper) and roast until tender and slightly charred. Gorgeous.

Oops should have said I was thinking a honey and mustard dressing on the salad

Don't think cumin and coriander will go with honey and mustard? Sad

Separate the florets and briefly cook the cauli for a min or two in boiling water, drain well and leave for about thirty mins to dry out. If it's soggy it won't roast so well. Put cauli in a roasting pan, mix your spices into oil and drizzle over the cauli. Put into medium hot oven and cook for about thirty to forty minutes checking if it's done. Shake cauli every ten minutes to ensure even crispiness. You want it to have the odd crispy edge but not be burnt.

Raw cauliflower is lovely - just as it is with no dressing or anything.

Blitz in food processor to make 'rice'. Stir fry rice in olive oil til toasty and golden, add lemon zest, finely diced chilli and chopped flat leaf parsley. Either have as side to warm salad or sprinkle over the warm salad.

I don't think this one can be eaten raw. It's so far past it's pick date it's practically in an old cauliflower home. But it's still good for eating. I reckon I could roast it for a bit and use that dressing on it? Hmmm that dressing sounds pretty awesome for the whole salad tbh.

So I can roast cauliflower but it needs to be kept dry, so can't be roasted in the same tray as my peppers, courgette, onions and garlic, is that right?

I'm such a cauliflower novice. I just make curry until it's gone normally Blush

Like idea of coronation, but think it would need steaming/blanching/microwaving a tiny bit, rather than completely raw?
