Please help! I need delicious recipes for a fat-free, meat-free meal for a diabetic guest!!

Arrgghh, I have just invited some people round for lunch tomorrow.
One person is diabetic and is currently having to stick to a fat-free diet.
The other is giving up meat for Lent (but will eat chicken if I can't think of anything else).
Please help with recipes for a main course and pudding.

veggie sausage casserole - yummy! I made this on Staurday as we had veggies guests and we all ate it. Made it with mashed pots (olive oil not butter or milk to mash it).
Fat free dessert - greek yoghurt with honey and almonds sprinkled on top.

What about a good homemade veggie soup? With beans/pasta?
Bake some plums with a little brown sugar and drizzle of orange juice. Did this last week and made some pancakes to go with them. No fat in pancakes, but would need spray frying pan so not sure how strict you would need to be...

Could do buckwheat pancakes - would have to remove the brown sugar and orange juice I suspect for the diabetes aspect?
It's hard to accomodate the fat-free, sugar-free, meat-free aspects without giving them celery on toast!
Leaning towards stuffed peppers - so to speak.

Yes, very restrictive. Was just thinking fat, not sugar for some reason...doh as it's for a diabetic. Pop over to the 10/10 thread, some of the fruitful ladies on there will have some better ideas...they make a mean veg curry...
