What to do with loads of raita

I have just been on an Indian cooking course and have made some lovely raita. I was a bit to enthusiastic though and have made rather a lot. I know you can't freeze it. Does anyone have any ideas of what I could do with it please. We are vegetarian. Thanks

Use it on jacket potatoes instead of sour cream?

Mix with cold new potatoes instead of mayo for a slightly different potato salad and serve with salmon - either cold poached or smoked

Dip for pitta bread

Make chicken tikka and serve alongside with rice and naan/flatbread

Serve with spicy lentil stew and flat breads.

Dilute with vegetable stock, chill, serve as a cold light soup for lunch, serve with very thin crisp toast.

Use instead of mayonnaise with hard boiled eggs for a starter or sandwich filling.

Very good with spicy aubergines, as it's not unlike tzatziki. On that note, warm some pitta bread, fill with avocado and raita. Mmm.
