Our after school babysitter cooks dd's dinner after school most days. She's happy to cook whatever but I'd prefer she spends more time playing, reading, etc with dd rather than cooking. Dd also has after school activities 2 days a week so there isn't much time in general.
Am struggling to think of meals suitable for one (I cook Fri-Sun for all of us and that seems a lot easier!). We seem to be stuck in a rut of home made veggie pizza, veggie omelettes, pasta/veg, when its just dd and meals need to be prepared quickly.
(There's usually weekend leftovers on Mondays but I don't batch cook as we're always short of time at weekends and our freezer is tiny.)
Dd eats most types of veg and pulses but is less good with carbs (doesn't like rice, couscous, quinoa or noodles - so carbs are usually bread, potatoes or pasta).
Would welcome any ideas for genuinely quick, healthy veggie meals that our babysitter could cook...
