Chia - why isn't my home-made like shop-bought?

The shop-bought chia 'puddings' are so jelly-like that they're almost a cross between jelly and tapioca, with crunch instead of chewiness.

My home-made stuff is just slippery crunch.

How can I get it to be as puffed up as the ready-made stuff in the shop?

Are you leaving it to sit for long enough? Overnight will do the trick.
