Healthy meal thread anyone?

Me and the dcs need to start eating a bit healthier, but Imy struggling to think of any meals/recipes. Does anyone have any they can share?

What sort of thing do you eat at the moment? I'm not very good at defining healthy, but things I make that I think of being at the healthier end are:

Ginger chicken noodles - veg, chicken and noodles stir fried with lots of garlic and ginger
Dhal - I use red lentils, cooked with tomatoes and carrot with lots of curry spice and spinach stired in at the end
Pasta (whole wheat) in a tomato-veg sauce
Moussaka made with lots of veg and a low fat greek yoghurt based sauce on top (could use lean beef mince in
Tomato based tuna pasta bake with lots of veg (peppers, courgettes, etc.)
Chicken Fajitas (wholemeal wraps) with mashed avocado (and sometimes cheese and sour cream, but that's a bit less healthy!)
Thai curry (green or red) with chicken and lots of veg
Turkey mince chili with black beans (made in the slow cooker)

Those all sound very nice! Will try some out.

At the moment we eat pasta withe jar sauces, pizza, freezer stuff, soups etc, so not the best diet admittedly.

Baked fish fillet- just wrap cod or salmon in foil with lemon and herbs or chillies, ginger, spring onions or what ever flavourings you fancy. Serve with veg and rice or cous cous.
Baked potatoes or sweet potato with 5 bean chilli
Peppers stuffed with cous cous, onions, courgettes and feta.
Chicken breast chunks brushed with honey and mustard threaded on skewers with peppers and baked served with new potatoes and salad
Spanish omlette

There is nothing wrong with pasta and sauce or soup - but home-made are definitely better than shop bought
The great thing though is that you can make both pasta sauce and soup in large quantities and freeze until you need them - there are lots of recipes for both on the BBC Good Food website www.bbcgoodfood.com
