Left over pulled pork...

So I have a huge piece of pork in the slow cooker for tonight. We are just having it with sweet potato and coleslaw tonight. But am already wondering what to do with the leftovers tomorrow.
Any good recipes!?

Pulled pork, cheese, and gherkin toasties are lovely. We always have these the next day to use up our pulled pork leftovers .

I really like frying it up till its crispy and using it in a stirfry with lots of garlic and ginger.

Use it in fajitas

Pile it on top of a slice of crusty bread, top with grated cheese and stick under the grill till bubbling. Delish.

Make a quiche - cheese, pork and mushroom is nice. Fry off the mushrooms first so they're not soggy. Or shred and add to a cauliflower cheese. Or make a pasta sauce - white/cheese/mushroom sauce and add herbs and pork. Or an omelette.

Crusty baguette with pulled pork, coleslaw and salad.

I often use it to top a pizza, also really nice cold in sandwiches.
