Cooking a rolled lamb joint

Does anyone know how I can cook this? Can I slow cook it? We are having it tonight but I will be out from about 3.30 - 5.30 so ideally I want to get it started before I go so we can eat around 6.30.

You don't say what cut it is. Breast of Lamb (delicious but very fatty) certainly needs to be roasted on a rack so that the fat can drip away, and probably best to prick it all over with a skewer. Likewise with rolled shoulder. Boned and rolled leg will be done slightly differently and it would be worth covering it so it doesn't dry out.
