Freeze food advice needed

I'd love to be more organised and hear that having several meals ready in the freezer would be a big help. My problem is what do you do with the frozen food you have batch made? Defrost it first ? How? Cook from frozen?

It's something I have absolutely no experience of doing. I don't want to poison everyone.

Ideas and advice needed please.

I defrost on the worktop and once defrosted put it in the fridge or you can defrost totally in the fridge (takes forever in my fridge though). If you have a microwave you can also defrost and reheat in there

Take it out at breakfast, will be safely defrosted by teatime. If it's high summer and you are defrosting meat, maybe leave in fridge instead

I do worry about defrosting things, always wonder if it's been left out to long and bacterial growth
