I've never made one before but would like to try for dd's birthday.

I presume I can buy everything I need from Lakeland?

Also, can you make a chocolate rainbow cake?

Do not put the buttercream in the fridge! It will keep perfectly well on the counter, out of the sun.

My buttercream is always quite soft, and softens further as I apply it to the cake. If you beat it up really thoroughly while making it,and add the icing sugar in 3-4 goes, beating well between times, it will be soft and fluffy. I find it gets quite stiff if you beat all the ingredients up in one go.

But, you know what, it will taste delicious no matter what. Grin

And it will look gorgeous, too!

Hope you had a wonderful party for DD. Can we see a picture of the finished product? Hope you are pleased that you did it! Smile

I have also made a great looking cake by blobbing the different coloured sponge mixtures randomly in a couple of cake tins and marbling them together with a skewer. Covered and filled the whole lot in chocolate icing and coloured sprinkles. My teenager loved it.

Just in case there's doubt.... Put the finished, iced cake in the fridge, not the icing before you've applied it! You need that soft.

Hope all went well.

That marbled cake sounds lovely tinkly.
I think with social media etc some people can get a bit fixated on perfect perfect, when mixed up does just as well, and is a unique take on it.

My first ever attempt at one last night, took me 5 hours! Hmm
I'm a total novice and having watched a "make a rainbow cake" video about 95 times I, wrongly, assumed that it made me a professional know it all and it would be turn out perfect! BlushGrin

I wanted to make the cakes the day before decorating so I could freeze them and make it easier.. I didn't get time so I did everything last night and it was a bit disastrous (burnt tops due to squeezing all 6 sponges in the over at once!) and then bits of cake being pulled off by the butter cream because it was getting late and needed to get it finished in time for bday today!

Not as good as I hoped but not bad for a first attempt I guess Smile
