Apple pie

How do you make a really great apple pie? I use sliced up Bramley apples with sugar but often find they are too sharp even with lots of added sugar, or go too mushy etc. What sort of apples do you us? Looking for failptoof recipe please!

I use any eating apples, cinnamon and a bit of nutmeg

Do you precook the apples first or slice them and cook them from raw in the pastry?

I chop into chunks and then cook with the spices and sugar until slightly soft. Hth x
