Mums dinner party

I've invited 5 mums over for dinner next week, so 6 of us for dinner.

I'm still pondering what to cook. Ideally something I can do in advance and pull out of the oven, like lasagne but I'm can't eat gluten so pasta is out. Would have done a fish pie but one doesn't like fish.

Any ideas?

A stew?

Curry?

A chicken marinated in garlic/lemon type thing, new potatoes, salad, crusty bread?

Fajhitas?

I'd just do a gluten free lasagna - no one can tell the difference with gf sheets and it always goes down well

Make a lasagne using thin strips of courgette or butternut squash (I think I've even seen these on sale in supermarkets!)

Or a cottage pie.

Mexican theme? Chilli, tortillas, nachos, salsa, guacamole etc.

Do a lasagne, but use either courgette, aubergine, or potato instead of pasta.

Or a moussaka (lamb mince, cheese sauce, aubergine).

Oven risotto? Chilli?

You guys are great!! Courgette lasagne sounds great!! I'm sure our giant tesco has courgette slices too.

Sponge, that's what I always do! Chilli, rice, guacamole, corn chips, a couple of salsas, cold Corona. It's easy and can almost all be made ahead of time.

Frittata (or crustless quiche if you want to think of it like that) with naice winter salads and slaws.

And lots of wine.

And chocolate dessert of some kind. Maybe meringue or ice cream. Or both.

Actually I'd forgotten that I do do a rather mean Mexican style dinner!!

Mexican sounds good! Enjoy.

We did lasagne recently with white radish (daikon) it was great and didn't miss the pasta. It's a Tom kerridge recipe.
