Vegetarian meals that DH will eat

Having a vegetarian couple over for supper soon and struggle with what to make because DH is SO fussy. I personally eat quite a lot of vegetarian food, a very small amount of which DH will tolerate.

They come over quite often so ideally I'd make something different to what I have before and it would be great to find more veggie stuff any way DH will eat.

He will not eat:
Fruit, sweet potato, squash, avocado, aubergine, cheese of any kind, yoghurt, cream of any kind (sour, creme fraiche, double, single etc), sweet things. So thinks like dried fruit in things are out.

So things I do so far (dinner party wise - do omelettes, colcannon etc sometimes)

Vegetable chilli, mushroom risotto, pasta stuff, Thai vegetable curry, Indian veg curry.

I don't like doing a meat and vegetarian option. Unless I'm doing a big spread like lots of curries etc. Mostly also because I want DH to get over the deep seated 'but where's the meat?' reflex.

Interestingly my HF shop does all sorts of ready made pestos, with or without parmesan or cashews or whatever! I do prefer home made though, a much fresher taste and you can use fresh parsley instead of basil (if there's none in the shops).

What's gorgeous is Spinach and Ricotta (or Cottage Cheese) Cannelloni. Takes a bit of prep - just mixing stuff up and stuffing the tubes, but not difficult and then just sling in the oven 45mins before you want to eat. Serve with garlic bread and salad. Make more than you think you will need because it'll be devoured. I make mine with cottage cheese as it's about one third of the fat. You could use a mixture of ricotta and cottage cheese. I use a Barilla jar of tomato sauce (all other jars are horrible) and make a white sauce to go over the top, sprinkled with some cheese.
