Something new with chicken breasts

Anyone got anything a bit different to do with chicken breasts? I'm getting bored of the usual currys, stir fry, wrapped in pancetta, Cajun or paprika, tagine, in red wine, chasseur and Spanish tray bake I know that seems quite a few but We eat a lot of chicken so just need more ways to serve it.

Butterfly them out; marinade in a bit of olive oil, garlic and lemon. Fry but don't overcook.

Meanwhile roast some chopped leeks and halved cherry tomatoes; again in olive oil with a scrunch of salt.

Put chicken in a roasting tin, tumble the leeks and tomato over, crumble some feta on top and grill to finish.

Nomnomnom.

bash them out, daub with mayo, press into crumbs....half and half crumbs and parmesan, bits of thyme, fry in a hot pan until golden

serve with salad, and a squizz of lemon on the chicken

Oh that leek and feta sounds amazing , i do chicken breasts with spinach cream cheese and bacon on top

Chicken escalopes - butterfly and flatten, dip in flour, egg then breadcrumbs (can add a few herbs and grated Parmesan if you want) and then fry. Serve with spaghetti and tomato sauce

Butterfly and crumb and do burgers? To be fair you've pretty much covered it. Pasta bake? Coronation chicken on jackets or with salad.

Stuffed with spinach and cheese.

Chopped and put in pasta with a nice sauce, either a creamy one or a chilli tomato
Cut up and stick in a pie

Chicken katsu is a big hit with DD. And quite quick.

I've got into makeing chicken Caesar salad a lot. Griddled chicken. Leaves. And the dressing is really easy to make.

Cut a pocket in each chicken breast, fill with a good flavour sausage such as venison (or one with caramelised onions or chorizo), wrap in a rasher of bacon and bake on a bed on leeks, mushrooms and onions. When cooked put chicken to one side, stir in crême frâiche and season to taste.
Serve with mashed potatoes 😋

lemon pepper chicken

1/2 cup Dijon mustard, 1/4 cup maple syrup, tbsp rice wine vinegar mixed up and baked with the chicken. Sprinkle fresh rosemary over before serving. Absolutely delicious!
