My butcher saved me the whole skirt this week and I fancy a change of recipe.

I quite like the look of this, not quite sure that everyone will like the walnuts though

I cooked it with some jasmine rice and some chilli and ginger stir fry veg

Thanks Blu, I have made that before!

In the end I just did my regular made up thing - wine, herbs, root veg, beef and Parmesan dumplings.

I made one with Guinness and chunky onions a few years ago- dark thick and sticky. With this cold weather it would be very satisfying with dumplings on top.
I've got rid of most of my cookbooks and just Google what I want but I'll see if I can find a similar recipe... It had juniper berries in it too IIRC.

Thank you! I froze half of the beef. Did you know that you only get about 2kg of skirt off one animal when it is butchered?

It is my favourite cut of beef, I prefer it to rib and everything else I buy and I always ask for the whole lot if possible.
