Need to cook something for work!

My workplace are having an event in a few weeks where we all need to bring a dish. Theme is food around the world and a lot of the 'easy' dishes are already taken.

We're a fairly big office - 60 staff - so it needs to be something substantial-ish so people can all have a taste. Does anyone have any recipes that I might be able to pull off please?

I do my version of ottolengis couscous, so Middle eastern, sort of. Lots of bits to do, but none of them tricky. Keep separate then assemble when required.

You need cous cous, prepared as normal (I use a sprinkling of boullion powder for extra flavour)

Whole almonds toasted until brown

Lots of finely sliced onions fried in oil until just going brown but still soft.
Cherry tomatoes fried in left over onion oil, keep whole but get some colour on.
Lemony dressing
Lots of chopped parsley
.. Combine just before serving, have extra parsley and olive oil to sprinkle on top and decorate with lemon wedges.

Thank you for the replies.

It doesn't have to be cold no. We have an oven and a microwave and I could take my slow cooker if needed.

If a lot of people are bringing savoury dishes I'd be tempted to do something sweet. Tiramisu? Key lime pie?
