I made a Christmas cake before Christmas, but due to family illness that required a hospital stay over Christmas the cake sadly never got round to being iced or decorated!
I still have the cake and plan on doing it as a simnel cake for Easter, however the recipe I've seen seems to be far simpler than my Christmas fruit cake, less alcohol etc. it has marzipan and glacé icing.
Any ideas? Would my cake work as a simnel cake?
