Probally a tad eager and early, I've been slacking the last few weeks so next week I shall be organised!

Monday- Thai sweetcorn fritters and mango salsa
Tuesday-black bean and sweet potato burgers with slaw and onion rings
Wednesday- onion, tomato and goats cheese tart
Thursday-roast veg lasagne
Friday- Greek salad quinoa
Saturday- spicy jacket potato with sour cream
Sunday- cauliflower 'steaks' not sure what to serve these with yet though

I am detrrmined to stick to it and so far so good. Also am avoiding random "pop ins" to the shop nearest to us
Sun - roast chicken (leftovers to be used for packed lunches)
Mon - mince beef pie and veg
Tues- jamie oliver smoked mackerel carbonara
Weds - leftovers from freezer (prob curry)
Thurs- DS1 turn to cook think he is doing a chicken and roast veg traybake
Fri - pizza/fish and chips/takeaway so long as it doesn't involve cooking
Sat - stir fry

I love sweetcorn fritters so much.

Just done ours. We're having (in whatever order sell-by dates on stuff turns out to be)

  • paneer butter masala from fresh India - it's gorgeous so we're having it for the second time in about 9 days
  • veggie burrittos with black beans, sweet potato and sweetcorn and served with mango salsa
  • Veggie haggis with tatties and neeps and savoy cabbage
  • Veggie sausage, chips, egg and peas (lazy dinner)
  • something else which I have currently forgotten (or maybe sweetcorn fritters now I've been reminded how much I love them)

Sun- Salad/cold meat/pickles/cheese/bits from fridge etc
Mon- Green lentil mousakka
Tues- Kedgeree
Weds- Suppers, I'll probably have fish, dd will have king rib with curry sauce
Thurs- Carrot and coriander soup, crusty bread and mushroom pate
Fri- Jackets, beans and cheese
Sat- Homemade kebabs.

Roast chicken, homemade sage and onion sour dough stuffing, roasties and as many veg as I can find!
Roasted cauliflower Dahl and rice
Squash, spinach and chickpea filo pie with salad
Red chilli and broccoli pasta
Veggie sausage and bean casserole with sweet potato mash
Chicken tomato and mozzarella gnocchi

I've just had cauliflower 'steaks' for dinner Mummy, we had them with sweet potato chips, tofu sour cream and black kale.

Starting tomorrow the plan is
Pasta with creamy mushroom sauce
Kichadi
Burrito bowl
Pineapple stir fry
Spaghetti with lentil ragu
Homemade fake "sausage" with mash and caramelised onion

wow these all look so interesting. I wouldn't know were to start with severl of the OPs meals.
I am very boring cook, shepherd's pie, spag bol, etc, with about 4 more interesting dishes, and I would love to try new things.
I meal plan, and stick to it, but my nightmare moment each week is sitting down with the blank piece of paper going 'what shall we have this week?'

How about posting the recipes for some of these?
I would love to know how to make:
Thai sweetcorn fritters and mango salsa
black bean and sweet potato burgers
how do you do your roast veg lasagne
how do you make your jacket potato spicy?

What is kichadi
and how do you make these cualiflower steaks?

Cauliflower "steaks" - boil a pan of water (with some veg stock if wanted) and place the cauli in whole. Poach for 5 minutes until softening but not soft - you want to be able to slice it without the florets breaking away. Slice it into slices about an inch thick. Bake for 35 - 40 minutes.

It is nothing like a steak Grin but does go well with chips and sauce.

Oh kichadi looks nice - for me, not sure my kids will go for it, although they all like jollof rice

Mines really dull this week

Monday: sweet potato with feta and red onion
Tuesday: chickpea and pesto salad
Wednesday: ready meal/beans on toast type thing
Thursday: Dahl and naan bread

To make the jacket potato spicy I rub the outside with olive oil, salt, cayenne pepper and paprika,

And to make the veg lasagne, I roast off peppers, onions, aubergine and courgette and tomatoes then add home made tomato sauce that I make in batches and freeze then just layer up lasagne as usual, I like to rip up chunks of mozzarella to put in between the layers because I'm greedy 😁

Tonight: chickpea curry
Tomorrow: mezze
Sunday: pasta with sundried tomato and olives
Monday: three bean enchiladas
Tuesday: will have to be something quick like sandwich/beans on toast
Wednesday: chunky veg soup
Thursday: pearl barley pea risotto

Egg curry from Fresh India with rice and raita and possibly something lentil-y

pasta arabiatta

veggie hotdogs with corn on the cob and jerk sweet potato fries (the sweet potato fries are frozen and then dd2 wants to try to convert them into cheesy jerk fries like she has in Turtle Bay!)

leek and potato soup and tiger bread
