Casserole/stew/curry one pot job for family dinner?

Hi have dh's parents, my mum and her hubby over for dinner sunday, dont want to do a roast. Looking for something tasty that I can do spuds or rice or bread with to keep it hopefully delicious but simple. Anything that lends its self to having a veggie version done in another pot at the same time woukd be a bonus. Don't mind a bit of spice x

How about tagine? You could do a chicken or lamb one for the meat eaters and a chickpea one for the veggies and then serve with couscous and/or flatbreads (like pitta)

Veggie option: Deliciously Ella's Mushroom and Chickpea stew. Takes about 10 mins to chuck together in one pot, I just add tons of spinach about 10 mins before the end (I also omit the tomato paste). Really is delicious. All done on hob.

Beef and mushroom stew. Feather steak in a big piece, chestnut mushrooms, onions (optional), red wine and stock cube. Brown meat, take out, add onions of using, mushrooms, cook for 10mins to soften, add meat back in, add red wine/stock, s/p, harissa or cranberry jelly depending on your taste. Cook in oven for about 3 hours. Meat is soft and deliciousLovely!

I would serve fajitas (maybe cook the chicken seperate so caters for the vegetarian)

Then a pot of rice / wedges
