I am super disorganised as it is (I have ASD), and due to illness can't cook much at all, stuff like grating/peeling hurts a lot. Our oven is pretty useless so I prefer to cook on the hob when I can, and our kitchen is tiny so don't have much work/storage space, even our fridge freezer is below standard size.
I use some ready meals and there are a few sauces etc that I don't mind but I feel really crap after eating them. A lot of the time I just don't eat or have toast but I don't feel better for it.
I'm thinking I need to use my freezer better, but not entirely sure how. I have tried the whole batch cooking thing (we do have a slow cooker which lives in a cupboard as no surface to put it on) but it gets a bit 'feast and famine' and even a day or two of epic cooking will take so much out of me that I'm useless for a week after, and then there's no room in the freezer for our usual frozen veg etc.
I'm thinking little bags of chopped onion/garlic/pepper/celery would be good, as then I can just fry and add tinned tomatoes for pasta sauce.
Lentil stew (which nobody but me eats!) I can do in a regular pot and get a few portions in freezer bags.
