Mon- cauliflower 'wing' tacos
Tuesday - sweet potato rosti, poached egg & asparagus

Fridays I look after my baby DGD so DH is cooking a gammon joint that we're having with sweet potato fries and eggs.
Sat - leftover gammon with jacket potatoes, salad, pickles
Sun- chicken and chorizo casserole in the slow cooker, I chuck potatoes in too, with green beans and broccoli
Mon -homemade turkey meatballs with pasta and a tomato sauce
Tues- another DGC day so quick salmon on spiralised courgette with Tilda pouch rice (love it)
Weds - spicy bean burgers, wedges, salad
Thurs- Thai red chicken curry and saffron rice

Next weeks menu done:

Monday: Bavette steak with béarnaise sauce, steamed broccoli, some sort of potato
Tuesday: Roast cod with watercress sauce, roasted baby plum tomato
Wednesday: Spicy butternut squash and black bean burger with chipotle salsa and guacamole, courgette chips
Thursday: pork tendril with mustard sauce, petit pots a la francaise
Friday: out
Saturday: spelt risotto with wild mushroom

We are doing the same each week at the moment, as I just started back at work after maternity leave and we need to get more organised about planning, so I'll be stealing lots of ideas from here too. I'm veggie, DH is gluten free and the baby is allergic to dairy and aubergines.

M: baked potatoes with cheese (fake cheese for DS), homous, salad
T: cashew and mushroom stir fry with egg rice
W: DH has a chicken ready meal and DS and I have veggie hot dogs with onions and a spinach and peanut butter relish/dressing
Th: mushroom, green pea and chickpea risotto
F: veg frittata with sauteed potatoes and tomato salad
S: eat out or homemade chickpea flour egg pasta with vegan pesto and roasted Mediterranean veg
S: Roasted rosemary and garlic potatoes, sweet potatoes, swede, onions and parsnips, Tesco free from stuffing. DH has a roast chicken breast and gluten free chicken gravy and DS and I have a Portobello mushroom stuffed with ground pumpkin seeds, spinach and almond butter and a red wine and blackstrap molasses gravy.

I've had a bit of a cooking day and stocked the freezer today in the hope that it will make this week easier! I've just gone back to work after mat leave and I have a very clingy baby in the evenings so it's not leaving alot of time for cooking.

Saturday: pizza and garlic bread with salad
Sunday: roast chicken with roast potatoes broccoli and red cabbage
Monday: chicken fried rice and curry sauce with leftover chicken and broccoli
Tuesday: savoury mince and rostis from the freezer
Wednesday: jacket potatoes with tuna crunch topping and salad (doing jackets in the slow cooker for the first time so fingers crossed)
Thursday: chicken korma from the freezer

doing pescatarian whole30 (shock to my system which is normally 95% vegan and my bank balance as I try to source the most ultimately sustainable seafood, which is sodding expensive). Still veganising the rest of the day but have to have fish in the evenings for protein

M - smoked white fish, green beans, jacket potato
T - tuna and tomato soup (with pasta for DC)
W - smoked scallops, whole roasted cauliflower and mashed sweet potatoes
T - whole salmon with rice for DC, cauliflower rice for DH and I, roast carrots and broccoli
F - cod thai stir fry

Don't have the whole week planned out, but:

  • Chickpea curry & rice & raita
  • Cheese perogies w sour cream on top + a bowl of beet borscht
  • Pasta w sundries tomato pesto, pine nuts & Parmesan
  • burritos w fried onions, spinach & beans, smoked tomato salsa, and guacamole
  • stir fried tofu, spinach, Savoy cabbage, loads of ginger & Szechuan peppercorns.

We are having a veggie week as I feel like a bit much meat is creeping into our diet.
Yesterday: sweeten fritters and beetroot salad
Today: veg and lentil ragu (currently in the slow cooker)
Wed: frittata
Thursday: chickpea burgers
Fri: coconut, sweet potato and lentil curry
Weekend not sure yet!

Saturday it was lasagna (as I was having neighbours in so it was easy once prepared ahead and could freeze any leftovers if necessary)

Sunday it was a "platter" (cured meats, veggie sticks, leftover dips from Saturday, cheese, breadsticks etc).

Yesterday was a veggie chilli (DH made it Sun night so we only had to reheat and cook rice).

Tonight, DD is having an enchilada (using a packet of spices, wrap from an open packet, cooked chicken from freezer and a handful of grated cheese). I am having something made with mushrooms or pasta with feta and tomatoes.

Tomorrow, I had planned chorizo potatoes but may revise to a smaller meal.

Thursday is roast lamb stew using frozen leftover roast lamb, frozen leftover roasted meditteranean veggies and some tomato (probably passata), seasoning, chuck it all in the oven for an hour. With fresh roast potatoes or mash.

Friday - possibly sea bass, broccoli and mash. Or leftover lasagna from the freezer. Or nasi goreng. (Or possibly takeaway, but I am trying to avoid that!).

I don't eat dairy and very little meat- but that's hardly being vegan is it?

(We are a very omnivore family - but we are trying to be less meat eating and eat more veg generally, and more fish generally, including trying to actually have vegetarian meals (actually veggie not pescatarian) at least once a week again (I have a big salad with just veg about 3/4 days for lunches - I'm talking about dinners).

I like, when DH is away, to make a mushroom stew thing - slowly fried mixed mushrooms with garlic and thyme, some white wine and cream, served over crunchy sourdough toast or as a sauce on pasta. DH thought it was a revelation when he had it recently, but tends to want some bacon or chicken on pasta as well.

I also do an M&S Welsh Rarebit which I bake with some part-baked rolls for crunchy bread to eat it - again something I tend to have as an option when DH is away, although DD has now copped it and wants it too. Which he also quite fancied when he had it one night.

Then again, I have been known to do myself a nice slab of steak and some roast potatoes and roasted vine tomatoes when he's away too....sometimes you just fancy it!

One recent child-free day, when not a lot of places were open, DH and I tried a vegan coffee shop/restaurant. We were fine with the options to eat, both found nice things. I think though I realized I couldn't do vegan when, not only was my quiche made without eggs or cheese, (very tasty but unusual), but I was offered a choice of "rice milk, soya milk or coconut milk" in my latte - soya milk works ok, and I would drink it again if that was the only option but I think I am a bit too wedded to the cow for my everyday coffee! Grin

Hardly ever eat out but 3 times this week!

Tonight - Nigella's chicken chorizo and potato roast (pizza and veg for kids)

Wednesday - baked salmon fillets with broccoli for DH & kids, Im going out for dinner and cinema

Thursday - baked potatoes with chilli
(Sausages and mash for kids)

Friday - steak with butternut squash, rocket and walnut salad (steak and veg for kids)

Saturday - DH and I out for a friends birthday (Chinese restaurant) Pasta and meatballs for kids

Sunday - roast chicken, potatoes, broccoli, mixed roast veg and yorkies
