Caramel, Carrot and Coconut cake.
1 jar of salted caramel sauce
2 large or 3 medium finely grated carrots.
Half a block of solid cream coconut - also finely grated
2 eggs
50g butter
Enough SR flour to bring it all together - will depend on the sloppiness of the rest of the ingredients but probably around 150g
Quarter tsp baking powder.
Mix it all together and bake it.
I have resolved to add Cardamon next time I make this, mainly for the alliteration but also I think the combo will work.
