My parsnip soup is bitter!

Made parsnip soup which I've done several times before with no issue and this time it's bitter.

Was trying to use up old parsnips from Christmas, didn't think it would be too much of an issue as they don't look gone off.

Is there a way to rectify this? The bitterness is more of an after taste.

I've added a tsp honey, some more salt and pepper but that hasnt helped much.

Please help! :)

Considered adding an apple as had a lovely parsnip and apple soup once.

Parsnips are a starchy veg where the starch turns sweeter once frozen. So the best thing to do is to freeze it, and come back to it another day.

Cumin, coriander and mustard seeds will help.

I've added in all of that. I think I'll freeze it overnight. Parsnip is still sweet but has very bitter aftertaste.

Did you use onion and burn it?
