Icing a sponge birthday cake

Hello all,

I'd like to make a Victoria sponge type cake for my daughter's first birthday but would also like to ice it with roll out icing.

Without using marzipan, how would I ice it properly? Would I need a layer of buttercream over the cake?

Which leads onto my next question of a good buttercream recipe please.

Many thanks for any advice.

You need some apricot jam that is warmed and cooled. Brush it over the cake and the icing will stick.

Yes you need to crumb coat and buttercream cover your cake. I would suggest that you look at youtube and follow each step perfectly or you'll end up with a mess. "How to cake it" is a good YouTube channel & would be a great start.

Here's my buttercream recipe.

250g butter
500g icing sugar sifted
1 tsp vanilla extract.

And a vanilla sponge recipe. Split mixture over two 8" tins.

4 medium or large eggs
240g self raising flour
240g butter
240g caster sugar
2 tsp vanilla extract
